SAGE DERBY: COOMBE CASTLE // Sage Derby is a variety of British Derby cheese infused with sage to produce a glorious green marbling effect and subtle herb flavour. Hard to find these days, it is England’s oldest and most famous cheeses originally made only for special occasions such as Harvest and Christmas. Freshly milled, salted Derby curd and sprinkles of fresh sage are arranged in layers and left to mature for six months.
LANDAFF: JASPER HILLS FARM // Landaff has a natural rind and a semi-firm paste with subtle aromas of cave and grass. Its balanced complexity harmonizes a bright buttermilk tang and savory brown butter notes.
MOODY BLUE: EMMI ROTH // Moody blue is a classic blue cheese, which is delightfully creamy with a subtle smokey flavour. Made from the freshest Wisconsin cow milk, it is smoked over fruit wood which results in a sultry, mouth watering flavour with hints of roasted nuts and coffee.
ROSSELLINO: PIENZA IL ROSSELLINO // Rossellino is a firm sheep’s milk cheese from Tuscany. Its name is and appearance is derived from characteristic architecture of the Tuscan towns. Rossellino is rubbed with tomato paste, giving it that earthy terracotta look typical to the roofs in the Tuscan buildings. The pate is firm and straw colored with classic flavor components of traditional Pecorinos. It is somewhat sweet with salty undertones and a rich nutty flavor.
FRENCH EMMENTALER SWISS: // A traditional, unpasteurised, hard cheese made from cow’s milk. The aroma is sweet with tones of fresh-cut hay. The flavour is very fruity, not without a tone of acidity. Emmental has walnut-sized holes. It is considered to be one of the most difficult cheeses to be produced because of its complicated hole-forming fermentation process. The cheese tastes delicious with a glass of wine.
TETILLA: NINFAS // This cheese has a pale yellow, thin, natural rind or sometimes no rind can be seen at all. Its texture is soft, thick and smooth with scatterings of air pockets. Yellowish ivory in colour Tetilla has a creamy mouth feel with buttery, slightly bitter and tangy flavours surrounding the palate. The maturing, which takes place between 10 and 30 days, happens in the hot and humid climate of Galicia.

IBERICO: PERIGRINO ORIGIN: SPAIN// This full-flavored Spanish ham is aged for 18 months in the mountains of Spain and known for its consistent quality. During the curing process the jamón undergoes a transformation transition as it sheds up to 40 percent of its weight – fat melting away and complex flavors and mild saltiness developing.
BAYONNE HAM: DELPEYRAT – ORIGIN: SOUTHWEST FRANCE – BASQUE // This Boneless Bayonne Ham is produced in the Ardour basin in the heart of French Basque Country. It is cured by soaking in sea salt and then dried for nine months. This slow cure leads to a tender ham that melts in the mouth and has a delicate, slightly salty taste. An essential addition to any meat platter. Bayonne Ham 1890 12 Mths Cured (Skinless, Trimmed, Boneless) from Delpeyrat.
DRY-CURED BONE-IN HOOF-ON HAM: SMOKING GOOSE – ORIGIN: INDIANAPOLIS, IN // This bone-in hoof-on ham started on pasture before aging in our cure room for a year under salt, black pepper, and mustard. Rich and silky, this Indiana prosciutto provides a perfect balance of salty goodness and porky sweetness.
COPPA AMERICANA: LA QUERCIA // Smoked paprika and unsweetened cocoa complement the dark meat of our dry cured coppa, a richly marbled cut from the top of the shoulder. Coppa pairs wonderfully with cheese, wine, and beer. Made by hand in Iowa by award- winning cured meat artisans Herb and Kathy Eckhouse.
SALAME ROSA: FRA MANI // Made from prime cuts from the shoulder, coarsely chopped to create a distinctive mosaic face and speckled with small cubes of plate fat cut from high on the hog. Dry roasted with a hint of natural fruitwood smoke. Mildly seasoned with coriander, white pepper and mace, and studded with pistachio nuts.

Our Wine wall features select wines, meads, and champagnes from domestic and international wine company’s and wineries. The left side of our upright displayed wine offerings are our domestic selections. The right side of our wine wall displays our international selection of wines. Our champagnes are displayed below the wine. We will at times have rare small batches of “Grower Champagnes” and fine wines from all over the world. All of your wine inquiries can be handled by any of the staff as they will be able to provide the education you need to make enjoyable decisions.
We offer select products by the glass (Menu always subject to change.) Any of our retail wine that you would like to purchase and open in the shop there is a Corking fee of $5. We will keep your corked bottle behind the counter if you do not want to carry it or have at your seat.

We have a 60 tap draft system that will concentrate on pouring unique and small batch beer, ciders, and meads. This selection is always changing depending on availability seasonally and freshness of product. We carry numerous local and regional beers including craft brews from all over the United States and select parts of the world.

We pour all our drafts by the glass in 5oz, 10oz, and 16oz increments. We also have flights available. Flight beers are each individually priced by the 5oz size so you can mix and match ALL of our beers for your flight. If you would like to purchase glassware that is welcomed and we can accommodate depending on availability.

We offer a fully serviced growler filling station where we will fill 32oz and 64oz growlers and howlers in our branded glass product or we will fill any of your personal growlers, and howlers. We can your favorite beers on site with our early nineteenth century canning machine. They are 32oz Crowlers with our beautiful sticker label. This is also a great novelty gift for anyone who loves beer or likes unique decorative pieces. We can all beers except, ciders, meads because Ohio regulations say so in the matter currently.
We offer a fully stocked beer wall to fulfill all of your beer retail needs. We have numerous select styles of beer in can, bottle, and bomber. We have 6-packs, 4-packs, and singles for purchase. Purchasing a single bottle to enjoy on premises for your immediate enjoyment in the shop is encouraged, and we will gladly chill it for you if necessary.
